CHICKEN NUGGETS

Active ingredients

400 grams chicken mince
Salt to taste
2 tablespoons parmesan cheese powder
1 teaspoon red chilli powder
Crushed black peppercorns to taste
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1/4 cup milk
3 white bread slices
2 eggs
1 cup panko breadcrumbs
1 cup cornflakes
Oil for deep-frying
Fresh parsley leaves for garnishing
Dip
2-3 tablespoons mayo
1 1/2 tablespoons tomato catsup
Couple of drops of tabasco sauce

Method

1. Mix together chicken, salt, parmesan cheese, chilli powder, crushed peppercorns, onion powder and garlic powder in a bowl.
2. Put milk in another bowl.
3. Trim the edges of bread pieces and include the slices to the milk and soak for 30 seconds.
4. Squeeze out the excess milk from bread pieces and add to chicken mix and mix well.
5. Break eggs in another bowl. Include salt and beat well.
6. Put cornflakes on a plate and crush. Add panko breadcrumbs and salt and blend well.
7. Heat sufficient oil in a kadai.
8. Divide the chicken mix into equal parts. Dip each part in beaten eggs, coat with cornflakes-breadcrumbs mix and shape into nuggets.
9. Put the nuggets in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
10. To prepare dip, mix together mayo, tomato catsup and tabasco sauce in a bowl.
11. Garnish with parsley leaves and serve hot with dip.

Ingredients

400 grams boneless chicken breasts, cut into thin strips
11 phyllo squares
4 tsps oil
2 tablespoons sliced garlic
1 big onion, chopped
Salt to taste
2 1/2 cups shredded spinach
1 tsp smoked paprika powder
Crushed black peppercorns to taste
1/2 cup crumbled feta cheese
Melted butter as required

Approach

1. Heat oil in a shallow nonstick pan. Add garlic and sauté till it turns golden brown.
2. Add onion, salt and sauté till translucent.
3. Add chicken and cook for 1 minute on high heat.
4. Add spinach and cook for 2-3 minutes on medium heat.
5. Include smoked paprika powder, crushed black peppercorns and mix well.
6. Cook on medium heat till the mix is dry. Switch off the heat, transfer the mixture in a bowl, include cheese and mix well.
7. Pre-heat the oven at 180 ℃.
8. Grease a cast iron pan with some melted butter. Place a phyllo square and brush some more melted butter on top. Repeat this procedure till all 10 phyllo sheets are utilized.
9. Bring the edges together and close it. Apply some more melted butter on top.
10. Crush the remaining phyllo sheet and location in the centre. Apply some more butter on top.
11. Bake in preheated oven for 35-40 minutes. Cut into wedges and serve hot.
