Burnt Garlic Fried Rice | The Wok Street | Chef Ankit | Sanjeev Kapoor Khazana

This is what you make with the residue after making the scorched garlic oil. This wonderful fried rice with scorched garlic and chicken is a lip-smacking spicy preparation.

CHARRED

Components

4 tablespoons scorched garlic + for garnish
3 cups cooked short grain rice
250 grams Chinese cabbage
1 medium green capsicum
1 spring onion
1 boneless chicken breast
2-3 tbsps garlic oil
1 tablespoon finely sliced ginger
2 tablespoons finely sliced garlic
2-3 green chillies, diagonally sliced
1 small carrot, cut into 1/2 inch cubes
Salt to taste
Black pepper powder to taste
2 tsps soy sauce
3 tsps vinegar

Approach

1. Carefully slice the Chinese cabbage. De-seed the capsicum and carefully chop it. Diagonally slice the spring onion greens and finely slice the spring onion bulb.
2. Finely chop the chicken breast.
3. Heat garlic oil in a wok, add ginger, garlic, and green chillies and sauté for 1 minute. Add spring onion and carrot and sauté for 1 minute.
4. Add chicken and sauté on high heat for 3-4 minutes. Add the cabbage and capsicum and blend well.
5. Toss in the rice. Add salt, black pepper powder, and force garlic and mix well. Add the soy sauce, and vinegar and blend well.
6. Add 3/4 of the spring onion greens and blend well. Transfer the rice into a serving bowl. Serve hot garnished with remaining spring onion greens.
