BROWN RICE PULAO

Ingredients

1 cup wild rice, soaked for 1/2 hour and drained pipes
1 tsp oil
1 tsp cumin seeds
1 inch cinnamon stick
1 bay leaf
2-3 cloves
2 medium carrots, cut into squares
10-12 French beans, cut into 1/2 inch pieces
1/4 medium cauliflower, separated into small florets
5-6 medium fresh button mushrooms
1/2 cup green peas, shelled and blanched
Salt to taste
2 green chillies, slit
2 tablespoons carefully sliced fresh coriander leaves

Approach

1. Heat oil in a non stick pan, add cumin seeds, cinnamon, bay leaf and cloves and sauté for a minute.
2. Include carrot, beans and cauliflower and sauté for 2 minutes.
3. Halve mushrooms and add along with green peas and salt. Mix well and prepare for 2 minutes.
4. Include rice and 2 1/2 cups water and mix. Include green chillies and mix again.
5. Add coriander leaves and mix well. Cover and prepare on medium heat till rice is done. Switch off heat and let it mean 10-12 minutes.
6. Serve hot.
