Bhare Baghare Tamatar | भरे बघारे टमाटर | Stuffed Tomatoes | Sanjeev Kapoor Khazana

BHARE BAGHARE TAMATAR

Ingredients

8 medium company red tomatoes
2 1/2 tbsps oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
8 curry leaves
2 medium onions, sliced
1/2 medium red capsicum, sliced
1/2 cup grated cottage cheese (paneer).
2 tsps sliced fresh coriander leaves + 1 sprig for garnishing.
2 green chillies, chopped.
Salt to taste.
1 1/2 tablespoons ginger paste.
1 tbsp garlic paste.
1/2 tsp turmeric powder.
2 tsps coriander powder.
1/2 tsp roasted cumin powder.
1 tsp red chilli powder.
4 tbsps peanut paste.
1/4 cup tamarind pulp.

Technique.

1. Remove eyes of tomatoes and blanch in warm water. Peel skin and scoop out the seeds to make cups.
2. Heat oil in a non-stick pan. Include mustard seeds and cumin seeds and sauté till mustard seeds splutter. Include curry leaves and onions and sauté for 2-3 minutes or till onions are browned.
3. To make packing mix red capsicum and cottage cheese in a bowl. Include coriander leaves, green chillies and salt and mix well.
4. Include a little water to onions and cook for 3-4 minutes. Add ginger paste, garlic paste and 1/4 cup of water and mix.
5. Stuff the tomatoes with the home cheese mixture.
6. Add turmeric powder, coriander powder, roasted cumin powder and red chilli powder to onions. Mix well and add some more water. Mix and prepare till gravy thickens.
7. Add peanut paste, salt and tamarind pulp and mix well.
8. Add a little water and mix. Place the packed tomatoes in the gravy and cover and cook on low heat for 10-12 minutes.
9. Eliminate the tomatoes carefully and organize them on a serving meal. Pour the gravy together with the tomatoes and serve hot garnished with a coriander sprig.
