BEETROOT SOUP.

Ingredients.

3 medium beetroots, very finely sliced.
2 tablespoons oil.
1 medium onion.
2 garlic cloves.
1 medium potato.
2 medium carrots.
Salt to taste.
1/2 tsp black pepper powder.
1 big tomato.
1 tbsp fresh cream.

Approach.

1. Heat oil in a deep non-stick pan. Approximately chop onion and garlic. Add to the pan and sautรฉ.
2. Thinly slice potato and carrots and include. Include salt, black pepper powder and stir. Cover and prepare for 2-3 minutes.
3. Include beetroots and 2 cups water, cover and cook till the vegetables are practically done.
4. Slice tomato and include. Prepare for 10 minutes.
5. Strain the veggies. Allow to cool. Blend into a smooth puree adding a little cold water. Transfer puree back into the pan, include the strained cooking liquor and blend well. Heat the soup till it comes to a boil.
6. Pour into a soup plate, garnish with cream and serve hot.
