These delicious pearl millet savoury pancakes are filled with calcium from the sesame seeds, vitamins and minerals from fresh methi leaves and a burst of numerous flavours! A must try for sure!
BAJRI NA CHAMCHAMIYA
Active ingredients
1 1/2 cups pearl millet (bajra) flour
1/3 cup yogurt
4 tsps chopped jaggery
2-3 tablespoons white sesame seeds + to spray
Salt to taste
1/2 tsp turmeric powder
3/4 tsp red chilli powder
1/2 tsp cumin powder
1 tsp coriander powder
1 tbsp coarsely crushed ginger-green chilli
1 1/2 cups chopped fresh fenugreek leaves
2 tbsps sliced fresh coriander leaves
1 tsp fruit salt
Ghee for cooking
Pickle for serving
Yogurt for serving
Method
1. Take yogurt in a bowl. Add jaggery and blend well. As soon as the jaggery melts, include bajra flour, white sesame seeds, salt, turmeric powder, red chilli powder, cumin powder, coriander powder, crushed ginger-green chilli, fenugreek leaves, coriander leaves and blend well.
2. Include 1 1/4 cups water and mix well. Include fruit salt and blend well.
3. Heat a nonstick shallow pan. Include ghee, sprinkle white sesame seeds and put a little ladleful of batter on top. Spray some more sesame seeds on top.
4. Prepare on low heat for 3-4 minutes. Flip, drizzle ghee and cook on opposite for 2-3 minutes more.
5. Serve hot with pickle and yogurt.
