Components for Andhra Style Chicken Fry:
( Tsp-Teaspoon; Tbsp-Tablespoon).
– Chicken, small pieces with bones- 500-600 gms.
For the masala powder:.
– Coriander seeds- 1 tbsp.
– Cumin seeds- 1/2 tsp.
– Dry red chillies- 5-6 nos.
– Green Cardamom- 3.
– Cloves- 3.
– Cinnamon- 2 little pieces.
– Shahjeera (caraway seeds)- 1/2 tsp.
– Entire peppercorns- 10-12 nos.
– Garlic cloves- 6.
Spice powders:.
– Turmeric powder- 1/2 tsp.
– Kashmiri Chilli powder- 1/2 tsp.
Other Active ingredients:.
– Onions, chopped- 2 medium (150 gms).
– Salt- 1 tsp or to taste.
– Groundnut or any other oil – 3-4 tbsp.
– Curry leaves- 20-25 nos.
– Coriander leaves sliced- 3 tbsp.
– Juice of 1/2 lemon or 1.5 tsp.
Preparation:.
– To make the masala powder, take a pan and include all the whole spices besides peeled garlic. Dry roast the spices on low heat for 2-3 mins. Now include the garlic cloves and roast on low heat for 1-2 minute. Eliminate the spices to a plate and let it cool.
– Grind/ mix it to a coarse powder. Set aside.
– Slice the onions and the coriander leaves, secure the curry leaves.
Process:.
– Take a fry pan and heat 3-4 tbsp oil.
– Include the chopped onions and fry on medium heat for around 6-7 minutes till light brown in colour.
– Add the chicken pieces, Turmeric powder, Kashmiri Chilli powder and salt. Mix and fry on high heat for around 2 minutes till the pieces are little brownish in colour.
– Now cover the pan with a cover and cook on low heat for around 10 minutes. The chicken will launch water and will also get prepared.
– Eliminate the cover and provide a stir.
– Location the cover once again and cook covered on low heat for another 10 minutes.
– Get rid of cover, mix it when and after that add.
– the mixed spice powder and mix it well.
– Mix and fry on medium heat for around 4-5 mins ensuring the chicken pieces are covered with the masala/spice. Sprinkle little water couple of times to prevent the masala from getting charred.
– Add the chopped coriander leaves and curry leaves, mix and continue to fry on low heat for around 3 mins.
– Last but not least add the juice of lemon, mix and switch off heat.
