I made a roasted veggie orzo salad today. Started the Acorn squash, carrots, fennel and sweet potato earlier, then roasted eggplant, bell peppers, garlic, red onion, zucchini and yellow crooked neck squash. Let cool while cooking the orzo. Dressing of EVOO, fresh lemon and lime juice and zest, S&P. Toasted pine nuts, cubed feta, julienned basil and fennel fronds at the end. Orzo and roasted veggies are a wonderful combination!
