छुहारे का हलवा | Chuhare ka Halwa | Sanjeev Kapoor Khazana

CHUHARE KA HALWA

Components

3 cups dried black dates (chuhare), seeded
3 1/2 cups milk
2 tbsps + 1/4 cup ghee
1/4 cup chopped almonds
1/4 cup chopped cashew nuts
2 tbsps chopped pistachios
2 tablespoons grated dried coconut
1/2 cup grated khoya/mawa
2 tablespoons sugar
1/2 tsp green cardamom powder

Method

1. Heat milk in a pan. Add the dates, mix well and on medium heat for 35-40 minutes or till they soften completely. Permit to cool.
2. Transfer in a blender jar and grind to a coarse paste.
3. Heat 2 tablespoons ghee in a pan. Add almonds, cashew nuts, pistachios and coconut and sauté till golden brown. Transfer in a bowl and set aside.
4. Heat remaining ghee in the same pan. Include the ground paste and sauté for 20-25 minutes or till the mixture is dry.
5. Include khoya and for 4-5 minutes. Add sugar, fried nuts and green cardamom powder and blend well. Prepare for 2-3 minutes.
6. Transfer in a serving bowl and serve warm.
