You can make a frittata without so much oil and with a fraction of the amount of eggs (maybe just 4 eggs and a little water) – especially if you are using a non-stick pan. You could add potatoes in with the ingredients to wick up some of the moisture and give the frittata more structure and put the tomatoes vinegar and herbs in with the onions instead of baking them first with all that oil. You could leave that oil out completely. Remember a healthy human diet consists of eating less than 10 percent of our daily calories each in protein and fat. Also 60% of the calories in an egg comes from fat! There is enough protein and fat in that recipe for over a month!
