You must be referring to Country Life Vlog — she is amazing and those videos are peaceful to watch. Veal is hard to come by — but so are bushels of pomegranates and 10 different structures with built in wood fire pits. LOL.
I’ve made a similar blanc stew using pork. Veal, especially a shoulder of it isn’t easy to come by and is very pricey.
