I’m a regular at home cook. I’ve never had an issue with frozen protein not feeling fresh…if you know your way around the kitchen, you should be able to very easily mask the fact it was frozen.
I have no idea how a restaurant can struggle with that.
The issue is that you can taste the frozen part vs. The fresh. I dont typically have a problem with it but a lot of people do.
