Components for Anda Chole:

( Tsp- Teaspoon; Tbsp- Tablespoon )

– Chole (dried chickpeas) – 1 cup (around 200 gms).
– Eggs- 6 boiled and shelled.

Tempering:.
– Cumin seeds -1 tsp.
– Black cardamom-3.
– Bay leaves-2.
– Whole red chillies-2.

Spice Powders:.
– Turmeric powder- 1/2 tsp.
– Red Chilli powder-1 tsp.
– Coriander powder-1.5 tsp.
– Cumin powder-3/ 4 tsp.
– Kashmiri Chilli powder-1 tsp.
– Garam Masala powder-1/ 2 tsp.
– Kasuri methi, dry roasted and crushed- 1.5 tsp.

Other Ingredients:.
– Onions grated -2 huge onions (200 gms).
– Ginger garlic paste -1.5 tsp.
– Tomato paste (fresh blended)- 2 medium (180 gms-around 2 cups paste ).
– Green chillies chopped-2.
– Green chillies, sliced-2 (to be used as garnish).
– Coriander leaves, chopped-3 tbsp.
– Oil-4-5 tablespoon.
– Ghee -2 tablespoon.
– Salt- 3/4 tsp + 1/2, tsp while boiling.

Preparation:.

– Soak the chole over night or for 5-6 hrs in water.
– Pressure cook the chole with salt and 1/4 tsp of turmeric powder for 2-3 whistles.
– Pressure the water and reserve the water for usage later.

– Dry roast the kasuri methi for around 30 secs and after that crush it with your hand when cooled.
– Peel and grate the onions. You can use a portable grater or can also utilize a grinder.
– Chop 2 green chillies and slice 2 green chilllies to be used as garnish.

– Boil 6 eggs, peel and set aside.
– Heat 1 tbsp oil in a kadhai & fry the eggs. Eliminate and reserve.

Process:.

– Add more oil to the exact same kadhai and include the entire spices for tempering.
– Now include the grated onion and fry on medium heat for around 5-6 mins till light brown.
– Now add the ginger garlic paste.
– Mix and fry on low heat for 2-3 mins till raw smell is gone.
– Now add the homemade tomato paste and mix it well.
– Then add the spice powders (other than garam masala powder), salt and mix and fry on medium heat for 4-5 minutes till the masala has browned and oil separates.
– Now add the boiled chhole and mix and cook for 2 minutes.
– Now add 300-350 ml water and provide a mix.
– Add the garam masala powder, sliced green chillies, kasuri methi and blend well.
– Now include the fried eggs, offer a mix and simmer for around 3 minutes.
– Garnish with great chopped coriander leaves and sliced green chillies (optional).

  4. I’m from Cape Town south Africa and I never found it so I made without but I still enjoyed the dish I must admit an I never added eggs an I used 1 tin chick peas an I served this with rice, toooo yummy, an I’m not sure if you serve with naan or roti I’m not sure an also I used fry onions
