* COMPONENTS *.

* Wonton Chips *.
Neutral oil, for frying.
Wonton wrappers, cut in half.
Furikake.

* Poke *.
1 pound tuna or salmon, diced.
1/4 cup soy sauce.
1 tablespoon toasted sesame oil.
2 teaspoons toasted sesame seeds.
1/2 cup shelled edamame.
1 teaspoon gochugaru.
1 little white onion, thinly sliced.
Freshly ground black pepper.

* Spicy Aioli *.
1/2 cup Japanese mayonnaise.
1/2 cup sriracha.

* Toppings *.
Scallions, sliced.
Cucumber, sliced.
Jalapeno, sliced.
Avocado, sliced.
Fried shallots.
Cilantro leaves.
Pickled ginger.
Lime wedges.
Macadamia nuts.

* TREATMENT *.
Make the wonton chips: Heat your oil to 350 ℉. Location the wonton wrappers into the oil and cook until they are golden brown and crisp, about 2 minutes. Remove the chips to a cake rack and season with furikake.

Marinade the poke: In a large blending bowl, integrate the tuna, soy sauce, sesame oil, sesame seeds, edamame, gochugaru, onion and black pepper. Toss to integrate and reserve.

Make the aioli: In a little mixing bowl, integrate the mayonnaise and sriracha.

Construct your nachos: Plate the wonton chips on the bottom of a serving plate. Leading with the poke, spicy aioli, scallions, cucumber, jalapeno, avocado, fried shallots, cilantro, pickled ginger and lime wedges. Grate the macadamia nuts over the leading and serve.

  1. It really looks super delicious and it’s something I wouldn’t be afraid to try at home. If it’s tuna, cilantro and limes, I’m in!

  2. Flavors good, but not nearly enough chips to balance the amount of topping placed for these nachos.

    1. I thought so too, but half of the topping falls off on its way into your mouth 😂

    2. I think there are enough toppings to allow each bite to have a little of everything without getting soggy. I’m most skeptical of the tuna amount. That said, I think all nachos should could with a side of fresh chips just to make sure the ratios are right.

    1. This plating would be fine without the chips underneath, served around or on the side would be more sensible.
