EGGLESS PINA COLADA PIECE

Active ingredients

1/3 cup pineapple jam
Chopped fresh pineapple to spray
3/4 cup butter
1 cup castor sugar
1 1/2 cups fine-tuned flour (maida).
1 1/2 tsps baking powder.
1/2 tsp baking soda.
A pinch of salt.
1/4 cup coconut milk.
A dash of vinegar.
Crumble.
1/4 cup cold butter.
3/4 cup desiccated coconut.
2 tablespoons castor sugar.
1/4 cup improved flour.

Approach.

1. Preheat oven at 180ºC.
2. Take butter in a bowl. Include castor sugar and beat till light and fluffy.
3. Sort improved flour, baking powder, baking soda and salt directly in the bowl. Blend with light hands.
4. Include coconut milk, vinegar and mix well.
5. Transfer the mix in a greased and lined baking tray and press well.
6. Bake in preheated oven for 20 minutes.
7. Take cold butter in a bowl. Add desiccated coconut, castor sugar and refined flour and blend well.
8. Spread pineapple jam uniformly over the baked mix. Sprinkle pineapple pieces, collapse mixture and press lightly.
9. Bake in preheated oven for 10-15 minutes. Permit to cool completely.
10. Demould, cut into squares and serve.
