One of the staple sabzis one will find in a Maharashtrian family on any normal day. Make sure you have jowar bhakris to go with it.
LAL MATHACHI BHAJI
Components
1 large bunch of red amaranth (laal mathematics), leaves apart and shredded
2-3 tablespoons oil
1 tsp cumin seeds
10-12 garlic cloves, squashed
2 medium onions, sliced
Salt to taste
1/2 tsp turmeric powder
2 green chillies, slit
2-3 tbsps scraped fresh coconut
Jowar bhakri for serving
Method
1. Heat oil in iron kadai. Include cumin seeds and when they begin to alter the colour, add garlic cloves and sauté for 30 seconds.
2. Add onions and sauté till clear.
3. Add salt, turmeric powder, green chillies and blend well.
4. Include red amaranth and blend well. Sauté on medium heat for 5-6 minutes.
5. Include coconut and blend well.
6. Transfer in a serving bowl and serve hot with jowar bhakri.
