  3. “Recipe: Saffron Madeleines”
    A delightful French treat elevated with the warmth and fragrance of saffron.
    * ​Ingredients:-
    ​1 tsp Saffron strands
    ​2 tbsps Warm milk
    ​2 Eggs
    ​½ cup Castor sugar
    ​1 cup Refined flour (Maida)
    ​½ tsp Baking powder
    ​A pinch of Salt
    ​1 tsp Green cardamom powder

    ​Preparation Steps:-
    ​Infuse Saffron: Start by soaking 1 tsp of saffron strands in 2 tbsps of warm milk. Stir and set aside to let the flavor and color infuse.
    ​Whisk Eggs and Sugar: In a large bowl, crack 2 eggs. Using an electric beater, whisk the eggs while gradually adding ½ cup of castor sugar. Continue beating until the mixture becomes light and fluffy.
    ​Sift Dry Ingredients: Sift 1 cup of refined flour, ½ tsp of baking powder, a pinch of salt, and 1 tsp of green cardamom powder into the egg-sugar mixture.
    ​Mix Batter: Gently whisk the dry ingredients into the wet mixture until just combined.
    ​Add Saffron Infusion: Pour in the saffron-infused milk. Use a spatula to fold everything together smoothly.
    ​Pipe into Molds: Transfer the batter into a piping bag. Pipe the batter into greased madeleine molds, filling them about ¾ full.
    ​Bake: Preheat your oven and bake the madeleines at 180°C for 10-12 minutes until they are golden and spongy.
    ​Cool and Serve: Allow the madeleines to cool before removing them from the molds. These are perfect when served with tea or coffee, especially during the evening.
