PROTEIN PULAO
Ingredients
1 1/2 cups soya nuggets
1/2 cup boiled kala chana
1 cup basmati rice, soaked
1 tbsp oil
1 tsp cumin seeds
10-12 black peppercorns
3 medium onions, sliced
3 green chillies
1 tsp turmeric powder
1 tsp red chilli powder
2 tbsps yogurt
Salt to taste
1 tsp garam masala powder
10-15 fresh mint leaves
Technique
1. Slice onions. Heat oil in a deep non stick pan, include cumin seeds, peppercorns and onions and sauté. Slit green chillies and add. When onions turn golden, include soya nuggets,
2. kala chana, turmeric powder, red chilli powder and yogurt and mix. Sauté for 2-3 minutes.
3. Drain and add rice and mix. Add 2 cups cooking liquour in which the chane were prepared and mix. Include salt, garam masala powder and mint leaves and cook.
4. When half the wetness is absorbed, cover and cook till rice is done.
5. Serve hot.
