MOONG DAL HALWA.
Components.
3 cups split skinless green gram (moong dal).
1/2 cup ghee.
6 tablespoons sliced almonds.
6 tablespoons chopped cashew nuts.
1/2 cup milk powder.
1/2 tsp green cardamom powder.
1 1/2 cups powdered sugar.
A big pinch of saffron.
Slivered pistachios for garnish.
Technique.
1. Grind the moong dal to a coarse powder.
2. Heat a non-stick pan, include the coarse powder and roast till fragrant and golden brown. Make a well in the center and add ghee and include almond and cashew nuts and roast for a few seconds. Mix well and take the pan off the heat.
3. Transfer into bowl and enable to cool entirely. Add milk powder, green cardamom powder and powdered sugar. Include saffron and blend well.
4. Transfer into an air tight container and consume to 15 days.
5. For making the moong dal, take 1/2 cup premix in a microwave safe bowl, add 3/4 cup hot water, cover with a cover and microwave on high for 2 minutes, mix and microwave once again for 2-3 minutes.
6. Garnish with pistachios and serve.
