MILLET POHA
Components
1 cup banyard millet (samo).
2 tablespoons oil.
2-3 tablespoons raw peanuts.
1 tsp mustard seeds.
1/2 tsp cumin seeds.
2 green chillies, chopped.
10-15 curry leaves.
2 medium onions, sliced.
Salt to taste.
1/4 tsp turmeric powder.
1/2 tsp sugar.
1 lemon wedge.
2 tbsps chopped fresh coriander.
Fresh coriander sprig for garnish.
Technique.
1. Heat a nonstick pan. Include banyard millet and roast on medium heat for 4-5 minutes.
2. Include 2 cups water, cover and cook on high heat till water is absorbed.
3. Lower the heat and cook for 5 minutes.
4. Heat oil in a nonstick pan. Add peanuts and sauté till golden brown. Drain and reserve.
5. Include mustard seeds and once they begin to splutter, include cumin seeds, green chillies, curry leaves and mix well.
6. Add onions and mix well. Include salt, turmeric powder and mix well. Sauté on medium heat for 2-3 minutes.
7. Add sugar and mix. Add prepared banyard millet and mix.
8. Sprinkle 2 tablespoons water, cover and cook for 2-3 minutes.
9. Squeeze lemon, add the peanuts, coriander and mix well.
10. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
