The moment I saw that title, I thought it was a typo, but as it turns out, it was not a typo at all. I thought it was supposed to be called a “garlic” steak and not “gaelic.”
$35.00 for a “Choice” cut New York steak with mashed potatoes and mixed vegetables? Insane price.
Remember that on the island of Hawaii most of the food has to be imported and that’s why it’s so darn expensive.
@BonnieNapierDay That is the BS colonial capitalist want you to believe to justify the insane prices. I’ve been living in Hawaii for decades and know how much it cost to ship and wholesale prices. Tourist get ripped off coming to Hawaii for vacation. Locals get ripped off shopping at Whole Foods, Safeway, Times Supermarket. Once you understand this, you will live comfortable and not paycheck to paycheck working two jobs.

Red wine is in it. What’s the point of adding water if you’re going to reduce it?
Probably to allow the flavors to develop over time without over reducing.
Pickup time. If you were cooking this at home, there’d be no need, but if you’re trying to bang out one of these on a chaotic line in less than 10 minutes, you want to start the sauce as soon as the steak goes down so that the sauce finishes cooking just as the steak gets done. Adding the extra water gives you insurance that the sauce won’t break if you look away from it for a few seconds
When you cook with wine, you need to reduce it to cook off most of the alcohol, thus called a reduction. The added liquid(water, broth, cream, etc.) is needed so the sauce doesnβt taste βwineyβ or like alcohol. Makes for a richer tasting sauce depending on the type of liquid used.
