This conventional dessert is made with soft rice flour crepes filled with a warm, nutty mix of roasted sesame seeds and jaggery. TIL PITHA.

Components.

1/3 cup Assamese black sesame seeds (til).
1 cup bora saul.
1 tablespoon fennel seeds (saunf).
1/4 cup grated dried coconut.
1/4 cup chopped jaggery.

Approach.

1. Wash the rice thoroughly. Include water and soak for 3-4 hours.
2. Transfer the sesame seeds in a mill container. Include fennel seeds and grind to coarse powder.
3. Transfer the ground mixture in a bowl. Include dried coconut and jaggery and blend well.
4. Drain pipes the drenched rice and spread on a kitchen towel and pat dry.
5. Transfer in a grinder jar and grind to fine powder. Transfer in a bowl Sprinkle 1 tablespoon water and blend well. When pressed securely between the fingers, the powder must form stiff dough.
6. Heat a tawa. Sprinkle a portion of rice mixture and cook for 2-3 minutes.
7. Spread out a portion of the sesame seeds mixture and fold tightly.
8. Enable to cool and serve.

  4. Thank you for sharing the tilpitha recipe, as an Assamese I would like to mention that according to our traditional method, we first roast the sesame seeds then grind them, and prepare the filling using jaggery and coconut. We never use sauf in this preparation.

    1. Yes, with sesame roasted and grinded (then fried with jaggery) we make til pitha, and in til pitha we don’t use coconut. In narikol(coconut) pitha, we use coconut and jaggery and here too we don’t use sesame. Means this pitha has got two varieties, one is til(sesame) pitha where the filling will be of sesame(fried with jaggery) and the other one is narikol(coconut) pitha where the filling is of coconut(fried with jaggery)
