Ingredients for the Hyderabadi Dum Ka Chicken:

– Chicken, curry cut pieces with bones -1 Kg

For the Paste:
– Fried onions – 2 large onions (around 1 US cup of fried onions).
– Almonds – 10 (soaked & peeled).
– Cashew nuts -12.
– Milk – 100 ml.

For Marination:.
– Turmeric powder-1/ 4 tsp.
– Red Chilli Powder-1 tsp.
– Kashmiri Chilli Powder- 5 tsp.
– Coriander powder-2 tsp.
– Cumin powder- 1 tsp.
– Salt – 2 tsp.
– Ginger garlic paste- 3.5 tsp.
– Green chilli paste- 1 tsp (4 green chillies).
– Blended Curd- 200 ml.
– Oil in which onions were fried-5 tablespoon.

Tempering:.
– Ghee-2 tablespoon.
– Cloves-6.
– Green cardamom-6.
– Cinnamon- 2 pieces.
– Peppercorns-1/ 4 tsp.
– Star Anise-1.
– Shahjeera-1 tsp.

Other Components:.
Coriander leaves – 2 tbsp (sliced).

Preparation:.

– Soak the almonds for an hour and after that peel the skin.
– Also slice 2 large onions and after that fry till golden brown.
– To make the paste, include all these products into a grinder and coarse grind it. Now include milk and make a smooth paste.
– Cut the green chillies into little pieces & then make a paste.
– Blend the curd/yogurt and reserved.

Marination:.

– Include the chicken pieces and all the active ingredients for the marinade in the pan you will cook in.
– Mix it well, close the pan with a lid and after that marinate for around an hour.

Process:.

– Place the pan on the stove/cooktop.
– Take a tempering spoon, heat ghee in that and add all the whole spices discussed.
– Provide a stir and then add the tempering/tadka to the marinaded chicken in the pan.
– Mix and prepare on high heat for 2-3 mins.
– Add around 150 ml water.
– Lower heat to low and cook covered on low heat for around 20 mins.
– Mix it well and after that continue to prepare covered on low heat for another 15 minutes.
– Eliminate the cover and garnish with fine chopped coriander leaves.
– Give a stir and then cook on low heat for another 2 minutes.
– Serve hot with white rice, zeera rice or roti/paratha/naan.

  7. So after marinate we heat the chicken and than we make other masala right ?

    1. 1. Make all the pastes and add the chicken to the pan in which you will cook it.
      2. Add all the ingredients/pastes other than the tempering to the chicken. Mix well and set aside to marinate.
      3. Place the pan on the stove and add the tempering as shown in the video.
      4. Now cook the chicken as shown in the video. 😊
