Active Ingredients for Kaju Chicken Fry:

( Tsp-Teaspoon; Tbsp-Tablespoon).

– Chicken – 500 gms (small curry cut pieces with bones).

Spice Powders:.
– Turmeric powder-1/ 2 tsp.
– Red Chilli Powder-1 tsp.
– Kashmiri Chilli Powder-1.5 tsp.
– Coriander powder -1 tsp.
– Garam Masala powder-1/ 2 tsp.

Other Active ingredients:.
– Onions, fine chopped- 1 big (100 gms).
– Ginger garlic paste-1.5 tsp.
– Curry leaves-20-25 leaves.
– Cashew nuts cut into halves -12 nos (1/2 cup).
– Groundnut oil-4 tablespoon.
– Salt – 1 tsp.

Preparation:.

– Great chop the onions.
– Cut the cashew nuts into halves.

Process:.

– Heat oil in a kadhai/wok and include the chicken pieces. Also add the turmeric powder and salt.
– Mix and fry on high heat for 5 mins till just little water remains.
– Now add the chopped onions and fry on medium heat for a minute. Then cover & cook on low heat for around 5 mins till the onions are soft.
– Now add the ginger garlic paste and spice powders.
– Mix and fry on medium heat for around 3 mins. Continue to fry on medium low to low heat for another 3 mins till the chicken is fried and the masala coats the chicken pieces.
– Now add the curry leaves and cashew nut halves. Mix and fry on low heat for around 3 minutes till the pieces are browned.
