Chicken Amritsari Restaurant Style|Amritsari Curry|Punjabi Curry|| Dish|Chicken Amritsari Gravy Dish|Tari Wala Chicken Gravy|Chicken Masala Curry|Tari Wala Amritsari

Ingredients for Amritsari Chicken Masala:

( Tsp- Teaspoon; Tablespoon- Tablespoon )

– Chicken, large pieces with bones- 1 kg

For Marination:
– Red Chilli Powder- 1 tsp
– Kashmiri Chilli Powder- 1.5 tsp
– Coriander Powder- 1 tsp
– Cumin Powder- 1/2 tsp
– Garam Masala Powder- 1/2 tsp
– Ginger Garlic paste- 3 tsp
– Lemon Juice-2 tsp
– Salt- 2 tsp
– Oil- 2 tablespoon
– Onions, fine sliced- 1 medium (75 gms).

Tempering:.
– Garlic fine sliced- 2 tsp (7-8 cloves).
– Green Chillies, fine chopped- 4.

Spice Powders:.
– Turmeric Powder- 1/2 tsp.
– Kashmiri Chilli Powder- 1.5 tsp (or 1.25 tsp???).
– Coriander Powder- 1 tsp.
– Cumin Powder- 1/2 tsp.
– Garam Masala powder- 1/2 tsp.

Other Components:.
– Onions, grated- 1 medium (75 gms).
– Tomato, great sliced- 250 gms (4 tomatoes).
– Ginger julienned- 2-3 tsp.
– Blended curd- 3-4 tbsp.
– Fresh cream- 3 tablespoon.
– Butter- 2 tablespoon.
– Oil – 2 tablespoon.
– Coriander Leaves, sliced- 3 tablespoon.

Preparation:.

– Fine slice one medium sized onion.
– Fine slice the garlic, green chillies and tomatoes. Also julienne the ginger. Set aside.
– Slice the coriander leaves prior to garnishing.
– Whisk the curd/yogurt and reserved.

Marination:.

– Set up the chicken pieces in a big frying pan. Marinate the chicken with products specified. Reserve for around 30-60 mins to marinate.

Process:.

– Location the pan with the marinaded chicken on the flame. Fry on high to medium heat for around 10 minutes till the chicken is browned and partly cooked. Eliminate the pan from the flame and set aside.

– Now take a curry pan and heat 2 tbsp oil. Add fine sliced garlic and green chillies and sauté for a minute on medium heat.
– Now include the grated onion, mix and fry on medium heat for around 5 minutes.
– Include all the spice powders and 3 tbsp water and fry on medium heat for 2 minutes till oil separates.
– Add the sliced tomatoes and 1/4 tsp salt and fry 1-2 mins of medium heat.
– Close the lid and on low heat for 5-6 mins till the tomatoes are soft.
– Now add the cooked chicken and julienned ginger and offer a mix.
– Prepare on medium heat for 3-4 minutes till the gravy coats the chicken pieces.
– Include the blended curd and mix it.
– Prepare on low heat for 3-4 minutes till oil separates.
– Add 200 ml water and cover & for around 10 minutes.
– Include fresh cream and sliced coriander leaves.
– Give a mix and simmer for 2-3 minutes till oil separates.
– Serve with naan, roti or rice.

  8. I just made this and it was amazing , I made changes but it still came out great . The changes were as follows , sesame oil vs olive , bell peppers vs Chile , chicken broth and wine not water , sour cream not yogurt , Thai curry not cumin , smoked paprika , added maggi liquid form , next time I might add liquid smoke not sure but I served over my chicken Biryani style rice with a garlic sauce / white sauce and it was amazing
