What about the water the porcini were soaked in? I strain it and always add it to the porcini, boil it down until the mushrooms are soft to get all the flavour from the water…. it’s a shame not to use it as well. I love the recipe and as I’m in Parma, Italy, I guess I’ll be using Parmesan😅
