There is so much more to a Mango. A yummy Kerala Mango Curry is a standard recipe, one that brings convenience and revives sweet-spicy memories!
KERALA MANGO CURRY
Active ingredients
2 large badami mangoes
3/4 cup scraped fresh coconut
10-12 madras onions, peeled
2-3 green chillies
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/2 cup coconut milk
Salt to taste
2 tbsps coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp dried fenugreek seeds (methi dana).
7-8 curry leaves.
2 dried red chillies.
Approach.
1. Cut each mango in half preventing the pit. Cut around the pit and dispose of the pit.
2. Make cross marks on the halves to divide into 4 pieces. Dig the flesh utilizing a spoon. Likewise, dig the flesh from the side pieces too. Reserve.
3. In a blender container, add scraped fresh coconut, madras onion, green chillies and 1/2 cup water. Blend to a fine paste.
4. Heat a deep pan, add the mangoes, turmeric powder, red chilli powder, and 2 cups water. Mix well and let the mix come to a boil.
5. Include the prepared paste and mix well. Cook for 1-2 minutes. Add coconut milk and salt. Mix well and prepare for 2-3 minutes. Take it off the heat.
6. Heat coconut oil in a tempering pan, add mustard seeds, let them splutter. Include cumin seeds, methi dana and curry leaves. Let the seeds alter colour.
7. Include dried red chillies and mix well. Take it off the heat. Add the tempering in the ready curry and blend well.
8. Transfer into serving bowl. Serve hot.
