Pretty sure the shells crack from thermal shock – just like glass. If eggs are room temp they don’t bust either.

I do my hard bilked and soft boiled eggs in my instant pot. When I boil them on the stove, they over-boil and they are impossible to peel. If I do them in the Instant Pot for 3 or 5 minutes and right into ice water they peel like a dream. Love them and can eat them everyday (and I do sometimes).
