Ingredients for Chicken Malai Tangdi Kabab:
( Tsp-Teaspoon; Tbsp-Tablespoon).
– Chicken Drumsticks (legs) – 6 (approx. 450-500 gms).
Almond-Chilli Paste:.
– Soaked & peeled almonds- 16-18.
– Green Chilli-1- 2 nos.
– Water-3 tbsp.
For the Marination:.
– Hung Curd- 5 tbsp (gross wt. 350-400 gms).
– Almond-Chilli paste- 4 tablespoon (made earlier).
– Ginger Garlic paste- 2 tsp (heaped).
– Salt-1.25 tsp.
– Fresh Cream- 2 tbsp.
– Turmeric powder-1/ 2 tsp.
– Black pepper powder-1/ 2 tsp.
– Garam Masala Powder- 3/4 tsp.
– Kasuri Methi powder- 1 tsp (dry roasted & powdered).
– Refined oil- 2 tbsp.
Other Ingredients:.
– Butter, for basting( melted) – 2-3 tablespoon.
Preparation:.
– To prepare the hung curd, pressure the water from the curd or plain yogurt using a strainer or fabric to have a thick curd with no water. This may take 1.5 to 2 hrs, so plan appropriately.
– Wash and pat dry the whole Chicken Legs/drumsticks.
– Now make 2 slits on the thick part of the chicken drumsticks.
– For the marinade, add all the components in a bowl. Mix it well with a whisk or spoon and add all the chicken drumsticks. Make certain the drumsticks are totally covered with the marinade.
– Set aside to marinate for 2 hours in the refrigerator. Get the marinated chicken from the refrigerator 30 minutes before placing in the oven.
Process:.
– Preheat the oven/OTG to 250 degrees C for 10 minutes.
– Set up the marinaded chicken legs on a metal rack.
– Slide in the rack/tray in the top slot of the oven.
– In an OTG, turn on both the upper and lower heating aspects and convection fan if offered.
– Roast for 10 minutes at 250 degrees C. After 10 minutes flip the chicken.
– Roast for another 10 minutes at 250 degrees C on the other side.
– Flip the chicken legs and baste with melted butter.
– Reduce the oven temperature to 200 degrees C.
– Roast for 7-8 mins at 200 degrees C. Flip the chicken and continue basting with melted butter.
– Lastly roast for another 6-7 minutes at 200 degrees. Eliminate the tray once the edges of the chicken are gently charred.
– Work as an appetiser.
