LOTUS LEAF RICE

Ingredients

2 lotus leaves
3 cups cooked rice
3/4 cup Pro V Select Whole Natural Cashew
2 tbsps oil
3-4 spring onion bulbs, sliced
1 tbsp chopped garlic
1/2 tbsp chopped ginger
2 fresh red chillies, stemmed and diagonally sliced
5-6 button mushrooms, quartered
200 grams chicken leg boneless, cut into thick strips
4-5 dried shitake mushrooms, soaked, drained and sliced
1 medium carrot, peeled, cut in half and very finely sliced
Salt to taste
Squashed black peppercorns to taste
1 tsp dark soy sauce
2 tsps red chilli sauce
1/2 cup chicken stock
1 1/2 tablespoons corn flour slurry
1/4 cup sliced spring onion greens + to sprinkle

Technique

1. Heat oil in a non-stick pan. Include Pro V Select Whole Natural Cashew and sauté till golden brown. Drain and set aside.
2. Add spring onion bulbs to the exact same pan. Add garlic, ginger and fresh red chillies and sauté for a minute.
3. Include mushrooms and sauté for 2-3 minutes.
4. Include chicken and sauté for 3-4 minutes.
5. Add shitake mushrooms, carrot and toss well.
6. Add salt, crushed black peppercorns and mix well.
7. Include dark soy sauce, red chilli sauce and chicken stock and mix well.
8. When the mixture concerns a boil, include corn flour slurry and blend well.
9. Include cooked rice and combine with light hands. Cook for 4-5 minutes or till the rice is heated thoroughly.
10. Include spring onion greens. Reserve some Pro V Select Whole Natural Cashew for garnish and include staying and blend well.
11. Heat enough water in a nonstick pan.
12. Location lotus leaves on the surface and include the prepared rice, fold the sides to make parcels.
13. Location in bamboo cleaner, set up on the pan and steam for 10-15 minutes.
14. Transfer the leaves on the serving plate, cut open the upper surface area, spray spring onion greens and remaining Pro V Select Whole Natural Cashew and serve hot.
