  4. I watched this video last night and decided to see if his way worked. Unfortunately I did not have a wood burning stove, or even a propane BBQ. All I had was an electric stove and a cast iron frying pan. The pan did have ridges, making it sort of like a BBQ grill. And instead of a really good piece of steak, I used a piece of boneless sirloin that cost $3.98 per lb. I put the burner on high, let it get really hot and then put on the frying pan and let that get totally hot before putting on the steak; which I had salt and peppered. I did exactly as Robert said, seared both sides before lowering the heat and then letting it gently cook before removing and letting it sit for about 3 minutes. This inexpensive piece of steak turned out very tender, perfectly cooked and truly delicious. Thank you Chef Del Grande.

  5. Perfect thing to watch when I’m on a diet LOL I do a lot of cooking over open fire. This is exactly how I do it. I must say I’ve never had a steak in a restaurant that compares to the ones I make myself. But this one definitely looks like it fits the bill my mouth is watering. And by the way it was done after the initial Sear Pittsburgh rare is my preference

    1. @dansig69 Exactly! I used to think I couldn’t be on a diet in the summer time. But grilling is the greatest for the Keto diet.

    2. @Peter Thiessen I have lost 75 lbs eating all the meat I want, look into Keto.

    3. My wife and I both agree steaks at chain restaurants never tasted like one I’ve ever cooked. This dude know the truth about how to perfectly cook a steak. This method makes any cut as good as it’s potential. Cut means so much

    4. @dansig69
Indeed, and it helps when we get older especially if we’re having problems with insulin resistance and high blood sugar levels.
I’ll never go back to bake potatoes and wheat bread even though I love them ,I love not being overweight ect.even more .

  6. Excellent vid. Without a doubt THE best steak how-to video I’ve ever seen. Some of my friends like well-done, I prefer med-rare. I always turn their well done steaks into jerky, I can’t/couldn’t cook them right. Now I’m looking forward to giving it another shot, although I personally think it’s an obscenity to cook a steak until it’s grey! At least now there’s a chance it will still be juicy. And my steaks will be better too. Thanks. I’ll swing by if I ever get to Houston.

  7. I enjoy rare steaks, seared on a really hot cast iron griddle then allowed to rest, but wow, cooking this way using the really hot sear and then a lower heat to finish has really opened my eyes to how steak can really taste, even when cooked medium or dare I say well done. I never thought I could possibly enjoy a well done steak but Chef Robert has taught me otherwise. Excellent video thoroughly explaining the technique and best of all it works perfectly. Thanks for the info.

  8. This was an amazing explanations about how to keep the juices inside the Protein.
    Thanks Chef.

  9. I’ve been grilling my steaks this exact method for a while now and I couldn’t be happier!!

  10. Thanks Chef Robert, i’ve been looking for this type of instruction and information for ever. I love to cook & eat steaks, i now have a lot more confidence. Thank you.

  11. I always build my fire with a hot and cool spot for just such a technique. The rule you apply works for EVERYTHING from proteins to veggies to get that grilled surface without compromising the interior of the item being cooked.
Thanks, RDG! I really miss the old Cafe Annie and my Cafe Express in the NASA Rd. area. When I worked for Glazer’s, I would ALWAYS take my out of town guests to Cafe Annie.
Cheers! to you and all the great Houston chefs!

  12. This guy covers a lot of the intricacies on cooking the perfect steak in an effortless and easy to understand way. Beginners might not grasp all the valuable info he is delivering but anyone that has done a lot of steak cooking knows this guy knows his craft.

    1. Completley agree..this guy knows his craft incredibly well..for me its cool to hear somebody speak my language.

  13. Thanks for such a fantastic video. I tried this for 10 family members this past Sunday and got nothing but rave reviews, even from the family critic who declared that she wouldn’t like it. Best steak I’ve ever grilled. Sir, you are certainly a Master Chef.
Btw, I grilled it on a charcoal grill.

  14. I was taught 50
years ago in our local steakhouse how to cook steaks EXACTLY like this ! I could taste that ribeye the first time he turned it.Wonderful instruction and very affable presentation ! Thank you kind sir !

  15. Great video! I’ve watched a lot of grilling videos, but you really showed how to HANDLE the heat, and what is happening! Perfection!!

  16. Chef has real skills and knowledge. He knows how cooked the steak is by the look, sound, and feel of it. No meat thermometer or timer needed. I tried the technique tonight over charcoal, and even at medium well (had to because wife is pregnant) it was still really tender.

  17. the true question is what happened to those juicy steak slices after filming was over ..

  18. Wow that steak looks amazing. I was doing it all wrong now I know the right way to do it. Thank you for the video. I’m going to use this information this week. My taste buds cannot wait.
