Zarda Pulao | ज़र्दा पुलाव | Sweet Rice | Chef Afraz | Modern Khansama | Sanjeev Kapoor Khazana

A saffron infused sweet rice dish made for unique celebrations. Sprinkled with nuts and dried fruits. A royal dessert undoubtedly.

ZARDA PULAO

Ingredients

A big pinch of saffron
2 cups Basmati rice, cleaned, soaked for thirty minutes and drained
1/4 cup ghee
2-4 green cardamoms
1 inch cinnamon stick
10-12 cashew nuts
2 tbsps raisins
1 1/2 cups sugar
1/2 tsp green cardamom powder
Blanched, peeled and slivered pistachios for garnish
Silver warq for garnish

Technique

1. Heat ghee in a handi. Add green cardamoms, cinnamon stick and sauté till fragrant.
2. Add cashew nuts and blend well. Prepare till light golden. Add raisins, mix and cook till they puff up.
3. Include the soaked Basmati rice and blend with light hand. Include saffron and mix.
4. Pour 3 3/4 cups water, mix and cook till the mix pertains to a boil and cook for 8-10 minutes. Add sugar and blend with light hand till well integrated.
5. Include green cardamom powder and mix.
6. Decrease the heat to low, cover the handi with a lid and continue to prepare for 8-10 minutes or till the rice is prepared entirely. Switch the heat off and permit the mix to rest for 5-10 minutes.
7. Transfer into a serving bowl, garnish with blanched pistachios, and silver warq.
