UPVAS BATATA BHAJI
3-4 medium potatoes (batata), boiled and peeled
1 tbsp ghee
1 tsp cumin seeds
1-2 green chillies, chopped
1 tbsp roasted and crushed peanuts
Salt to taste
1 tablespoon fresh scraped coconut
1 tablespoon chopped fresh coriander leaves
Rajgira puris for serving
1. Heat ghee in a non-stick pan. Include cumin seeds and sauté for 30 seconds. Include green chillies and mix.
2. Crush potatoes into the pan and toss. Include 3/4 cup water, mix and gently mash.
3. Add peanuts, salt, coconut and coriander leaves, mix and cook for 1-2 minutes.
4. Serve hot with rajgira puris.
