Who knew turai could taste this excellent? Well, we're making it possible in today's #SameSabziNewAvatar, where we have actually transformed turai into this ultra-healthy 'Turai ka Shorba' that you'll absolutely love!
TURAI KA SHORBA
Ingredients
300 gms ridge gourd (turai).
2 tbsps ghee.
1/2 tsp cumin seeds.
1 bay leaf.
4-5 black peppercorns.
1-2 green chillies, sliced.
2 tsps chopped garlic.
1 tsp chopped ginger.
8-10 fresh coriander roots.
1 medium onion, chopped.
1/4 tsp turmeric powder.
Salt to taste.
3 1/2 cups vegetable stock.
1/2 tablespoon butter.
1 tsp lemon juice.
Fresh cream for garnish.
Red chilli flakes for garnish.
Method.
1. Peel the ridge gourd and approximately slice.
2. Heat ghee in a deep non-stick pan. Include cumin seeds, bay leaf, and black peppercorns and sauté till fragrant.
3. Add green chillies, garlic, and ginger and sauté for 1-2 minutes. Add coriander roots, onion and sauté till translucent.
4. Include turmeric powder, salt and sauté for a minute. Add sliced ridge gourd and blend well.
5. Include 3 cups vegetable stock, mix and give a boil. Cook on medium heat for 12-15 minutes.
6. Switch the heat off and dispose of the bay leaf. Blend the mixture to a smooth mix with the help of an electric hand blender.
7. Put the pan back on heat, include staying stock, mix well and bring it to a boil.
8. Include butter and lemon juice and stir well. Change the heat off.
9. Transfer the turai ka shorba into serving bowls. Garnish with fresh cream and red chilli flakes. Serve hot with bread of your option.
