Now this is what we were waiting for. Toovar dana is an interesting desi preparation.



2 cups boiled fresh pigeon peas (toovar dana).
Sea salt to taste.
Squashed black peppercorns to taste + to sprinkle.
2-3 tbsps tahini.
1 tablespoon lemon juice.
2 tbsps olive oil + to drizzle.
1/2 little bunch of fresh green garlic.
Red chilli powder to spray.


1. Transfer toovar dana in a food mill. Add sea salt, crushed black peppercorns, tahini, lemon juice, olive oil, green garlic and procedure to a fine paste.
2. Transfer in a serving bowl, make a well in the centre and drizzle olive oil. Sprinkle red chilli powder, crushed black peppercorns and serve.
