TOMATO CHILLI BAKED FISH

Ingredients

For one part
2 medium tomatoes, blanched
1/2 tsp red chilli flakes
150 gms rawas fish fillets
1 tablespoon + 1 tsp additional virgin olive oil
5-6 garlic cloves, finely sliced
Salt to taste
Couple of fresh thyme leaves, chopped
1/2 tsp lemon juice
6-8 broccoli florets, blanched
Micro greens for garnishing
Lemon wedges for garnishing

Method

1. Heat 1 tablespoon olive oil in a non-stick pan. Add garlic and sauté for a minute.
2. Peel, deseed and carefully chop tomatoes. Contribute to the pan alongwith salt and thyme leaves, mix and sauté well. Add chilli flakes and mix well.
3. Marinate the fish with lemon juice and salt.
4. Preheat oven to 180 ˚C.
5. Arrange broccoli florets on baking paper. Location fish fillets on the top, include tomato mixture on top and drizzle some olive oil. Bring in the edges to make a packet.
6. Transfer package on a baking tray, put the tray in the preheated oven and bake for 15-20 minutes.
7. Open the package, garnish with micro greens and lemon wedges and serve hot.
