SWEET POTATOES WITH HONEY.

Components.

2 sweet potatoes.
1 1/2 tsps honey.
3 tablespoons oil.
Salt to taste.
1/2 tsp sugar.
1/4 tsp black pepper powder.
1 tsp red chilli powder.
4 spring onion bulbs.
2 tablespoons carefully sliced garlic.
1/2 tsp soy sauce.

Method.

1. Scrub and wash sweet potatoes well. Cut them into 4 inch pieces, halve them and cut into thin long strips. Put them into a bowl, drizzle 1 tbsp oil, sprinkle salt, sugar, a pinch of black pepper powder, 1/2 tsp red chilli powder and mix well.
2. Put them in air fryer basket and cook at 180 ° C for 5 minutes.
3. Lower heat and cook for 5 minutes more.
4. Slice spring onion bulbs. Heat remaining oil in a non stick pan, include garlic and saute till lightly browned.
5. Include spring onions and sauté till onion softens. Include air fried sweet potatoes and toss.
6. Add remaining black pepper powder, remaining red chilli powder, 1/2 tsp soy sauce and toss well. Include honey and toss.
7. Transfer into a serving platter and serve hot.
