Fried Tuna Sticks with Wasabi Mayo Sauce

-use regular frozen ahi at < half the price -roll ahi in soy and wasabi before rolling in flour -use spicy tuna sauce as dip (mayo, siracha) -after fry drop into and roll in sesame seed

I woulda gone for a deeper brown crust.
A couple of ice cubes along with ice cold water in the batter helps too.
