Spicy Mutton Curry | स्पाइसी मटन करी | Mutton Recipes | Sanjeev Kapoor Khazana

Anywhere in the country, a mutton curry is spicy. The black pepper simply suffices when the mutton cooks and also in the gravy. The kala masala works its magic too. As spicy as it can be.

SPICY MUTTON CURRY

Ingredients

750 grams mutton, cut into 1 inch pieces on the bone
1 medium onion, very finely sliced
1 bay leaf
1 inch cinnamon stick
10-12 black peppercorns
Salt to taste
1/4 tsp turmeric powder
Curry
2 tablespoons oil
2 tsps cumin seeds
2 tsps fennel seeds (saunf).
1 tablespoon crushed ginger-garlic-green chillies.
1 large onion, sliced.
2 medium tomatoes, sliced.
Salt to taste.
1/2 tsp turmeric powder.
2 tsps red chilli powder.
1 tbsp kala masala.
Squashed black peppercorns to taste.
1/4 cup chopped fresh coriander leaves + for garnish.
1 inch ginger, cut into thin strips.

Technique.

1. Put the mutton in a pressure cooker, include onion, bay leaf, cinnamon stick, black peppercorns, salt, turmeric powder and 3/4 cup water and mix well. Cover with a cover and cook under pressure on medium heat for 3-4 whistles.
2. To make the curry, heat oil in a kadai. Include cumin seeds and fennel seeds and let them alter colour. Include crushed ginger-garlic-green chillies and mix well. Cook for 1-2 minutes.
3. Add onion, mix and cook for 1-2 minutes or till translucent. Include tomatoes, mix and cook for 1-2 minutes.
4. Add salt, mix, cover and cook till the tomatoes turn soft and pulpy.
5. Add turmeric powder, red chilli powder, kala masala and mix well. Add crushed black peppercorns and mix. Cover and prepare for 2-3 minutes or till the oil separates.
6. Include coriander leaves and mix well.
7. Open the cooker once the pressure has decreased entirely, include this into the curry mix and mix well. Cover and cook for 8-10 minutes.
8. Transfer the curry into a serving bowl. Garnish with ginger strips and coriander leaves. Serve hot.
