A deep-fried, flavoured and spiced rice flour preparation that's a terrific tea-time treat and that can be provided as a free gift.
RICE PAPDI
Ingredients
1 cup rice flour
2 tablespoons soaked split skinless green gram (dhuli moong dal).
2 tbsps soaked sago (sabudana).
1 tsp cumin seeds.
1/2 tsp carom seeds (ajwain).
1 tsp white sesame seeds.
1/4 tsp black pepper powder.
1 tsp ginger-garlic paste.
8-10 curry leaves, carefully shredded.
1 tablespoon chopped fresh coriander leaves.
Salt to taste.
Method.
1. Integrate together rice flour, soaked split skinless green gram, drenched sago, cumin seeds, carom seeds, white sesame seeds, black pepper powder, ginger-garlic paste, curry leaves, and coriander leaves in a big parat. Add salt and 1 cup lukewarm water and mix till a soft dough is formed.
2. Take a little portion of the dough, shape it into a ball.
3. Place plastic sheets on both sides of a roti press, grease it with oil and location a dough ball in the centre. Press to make a little disc.
4. Heat sufficient oil in a kadai. Carefully move the discs in the hot oil and deep fry on medium heat till golden brown and crisp. Drain pipes on an absorbent paper. Permit to cool a little.
5. Arrange the papdis in a serving bowl or a jar. Serve.
