Rice Kurkure | चावल के कुरकुरे | Tea Time Snacks | Sanjeev Kapoor Khazana

Leftover rice transforms into this light, spicy and chatpata treat that's popular among kids.

RICE KURKURE

Active ingredients

1 cup remaining cooked rice
1/4 cup gram flour (besan).
2 1/2 tablespoons corn flour.
1 tsp red chilli powder.
1/4 tsp turmeric powder.
1/4 tsp soda.
Salt to taste.
Oil for deep frying.
Spice mix.
1 tsp chaat masala.
1/4 tsp citric acid.
1/4 tsp red chilli powder.

Approach.

1. Put cooked rice in a mixer container, add 1/2 cup water, and grind to a fine paste. Transfer into a large bowl. Include gram flour, corn flour, red chilli powder, turmeric powder, soda, and salt. Include 1/4 cup water and blend till a smooth batter is formed.
2. Transfer the mixture into a squeezy bottle.
3. Heat adequate oil in a kadai. Eject small strips of the mix into the hot oil and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
4. Take chaat masala in a broad shallow bowl. Include citric acid, red chilli powder and mix well. Add the fried rice sticks and gently toss.
5. Serve.

    Can anyone recommend a good grinder that’s available outside India? Since this is soft, my food processor will be able to do the job, but it is not capable of grinding uncooked dal or rice.
