Ragi Rava has plenty of nutrients and highly beneficial for pregnant girls and diabetic people. Dry roasted ragi rava is cooked with south Indian spices, peas, tomatoes, onion and carrot. You will like this healthy snack dish. The ultra-healthy variation of our regular upma!With the goodness of the superfood, ragi, here's an upma version which is ultra-healthy!

RAGI RAVA UPMA

Ingredients

1 1/2 cups ragi rava
2 tbsps oil
1/2 tsp mustard seeds
1 tsp split skinless black gram (dhuli urad dal).
8-10 curry leaves.
2 green chillies, sliced.
2 medium onions, sliced.
1 medium tomato, chopped.
Salt to taste.
1 medium carrot, peeled and cut into 1/2 cm pieces.
1/2 cup green peas.
1/2 tsp sugar.
Scraped coconut for garnish.
Coriander sprig for garnish.

Technique.

1. Dry roast ragi rava in a nonstick pan on medium heat for 4-5 minutes.
2. Heat oil in a nonstick pan. Include mustard seeds and as soon as they start to splutter, add urad dal. Sauté till golden brown.
3. Add curry leaves, green chillies, onions and blend well. Sauté till translucent.
4. Add tomato, salt and cook till tomatoes are pulpy.
5. Include carrot, green peas and mix well. Add 1/2 cup water, cover and cook for 3-4 minutes on medium heat.
6. Include the roasted rava advertisement mix well. Add 3 cups hot water, sugar and mix.
7. Cover and cook on medium heat for 8-10 minutes.
8. Transfer into a serving bowl, sprinkle coconut, garnish with coriander sprig and serve hot.

    The other variation to the recipe could be steaming the ragi flour and adding it at the end without or with water being sprinkled to keep it nonsticky. Ghee is to be added as a taste enhancer as it is good for the health.

    1. @MeenakshiSharma-fu1zu  You can use the idli/dhokla cooker to steam. Dry/Ghee roast the ragi flour. Allow it to cool down. Sprinkle water to get the dry flour moist. Steam for 5-7 minutes in an idli/dhokla cooker.
