PUMPKIN

Ingredients

500 grams red pumpkin, peeled, seeded and cut into 1 inch pieces
A pinch of turmeric powder
Salt to taste
A pinch of red chilli powder
White pepper powder to taste
1 1/2 tsps onion powder
1 tsp garlic powder
1/4 tsp black salt
1/4 tsp dried ginger powder
2 tsps sugar
A big pinch of roasted cumin powder
1 tsp oil
1 tsp vinegar

Method

1. Heat a nonstick pan. Add pumpkin, 1 1/2 cups water, turmeric powder and cook on medium heat for 8-10 minutes.
2. Allow to cool and transfer in a mixer jar. Grind to a fine paste.
3. Heat a shallow nonstick pan. Transfer the ready puree, add salt, red chilli powder, white pepper powder, onion powder, garlic powder, black salt, dried ginger powder, sugar and blend well.
4. Cook on medium heat for 5-6 minutes or up until the mix is thick.
5. Include roasted cumin powder, oil, vinegar and blend well.
6. Enable to cool and store in airtight container.
7. Usage as needed.
