A typical Goan breakfast, poi or bread served with rushed eggs, grilled tomatoes and sausages. Looks charming, no?

POI WITH EGGS

Components

4 pois
8 eggs
2 tbsps tbsp olive oil + for sprinkling
8 chicken sausages
Salt to taste
1 cup milk
15-16 cherry tomatoes
Squashed black peppercorns to taste
1/4 small bunch fresh coriander leaves
2 tablespoons butter
1 cup grated mozzarella cheese

Method

1. Break the eggs in a bowl, include salt and milk, whisk well.
2. Heat olive oil in a nonstick grill pan.
3. Cut the chicken sausages vertically, position them on the hot grill pan. Sprinkle salt, grill on both the sides for 1 minute on each side.
4. Cut the cherry tomatoes in half, sprinkle salt and crushed peppercorns. Drizzle some olive oil over it.
5. Chop coriander leaves and add to the tomatoes. Mix till well integrated.
6. Heat butter in a nonstick pan, include the egg mixture and grated cheese, cook for 1-2 minutes. Add crushed peppercorns and blend lightly. Prepare for another minute.
7. Cut the pois in half.
8. Serve the scrambled eggs with pois, grilled sausages, and cherry tomatoes mixture.
