3-4 tablespoons peanut butter
400 grams boneless chicken breasts
2 tbsps oil
Salt to taste
Squashed black peppercorns to taste
2 medium onions, sliced
1 tablespoon sliced garlic
1/2 tablespoon sliced ginger
1 large tomato, chopped
1 1/2 tsps paprika powder
1/2 cup coconut milk
1 tsp soy sauce
2 tsps sliced palm jaggery
2-3 tablespoons chopped spring onion greens + for garnish
Approach
1. Cut chicken into 1/2 inch cubes.
2. Heat oil in a nonstick pan. Include chicken pieces, salt, crushed black peppercorns and sauté for 2-3 minutes. Drain in a bowl and set aside.
3. Include onions in the same pan and sauté till translucent.
4. Add garlic, ginger and sauté for a minute.
5. Add tomato and cook till pulpy. Include paprika powder, salt, crushed black peppercorns and blend well.
6. Include peanut butter, coconut milk and mix well.
7. Include 1 cup water and blend well. Include soy sauce, palm jaggery and mix well.
8. Add spring onion greens and mix well.
9. Transfer in a serving bowl. Garnish with spring onion greens and serve hot.
