For the love of paneer. A stir-fried preparation of paneer and veggies in an intense tempering is what you will often find on the menu of restaurants.

PANEER JALFREZI

Components

400 grams-cottage cheese (paneer), cut into 2-inch-long pieces
3 tbsps oil
1 tsp cumin seeds
2 dried red chillies, stemmed and broken
2 one-inch pieces of ginger, cut into thin strips
1-2 green chillies, chopped
2 medium onions, thickly sliced and layers separated
1 tsp turmeric powder
1 1/2 tsps red chilli powder
2 medium green capsicums, seeded and cut into thick strips
Salt to taste
1 1/2 tablespoons vinegar
2 medium tomatoes, seeded and cut into thick strips
1 tsp garam masala powder
2 tablespoons sliced fresh coriander leaves

Approach

1. Heat oil in a non-stick kadai. Include cumin seeds. When they change colour include red chillies, ginger strips, green chillies and onions. Sauté for 30 seconds.
2. Add turmeric powder, red chilli powder, mix well and add capsicum. Cook for 2-3 minutes. Add paneer pieces and toss. Add salt and vinegar and cook for 2-3 minutes. Add tomato pieces and garam masala powder and blend well.
3. Serve hot garnished with coriander leaves.
