Onion Tomato Pulao | प्याज़ टमाटर का पुलाव | Pulao Recipes | Sanjeev Kapoor Khazana

Boondi raita ki lazzat badhaye, ye . Spicy and a fantastic choice when rice needs a twist.

Ingredients

3 medium onions, chopped
3 medium tomatoes, chopped
1 1/2 cups Basmati rice, soaked for 30 minutes and drained
3 tablespoons ghee
1 tsp cumin seeds
2 bay leaves
6-8 black peppercorns
Salt to taste
4-5 green chillies, slit
1/4 tsp red chilli powder
4-5 tablespoons sliced fresh coriander leaves
Fresh coriander sprig for garnish
Boondi raita for serving

Technique

1. Heat ghee in a deep nonstick pan. Add cumin seeds, bay leaves, peppercorns and sauté till aromatic.
2. Include onions and sauté till translucent.
3. Add tomatoes, salt, green chillies and mix well. Cook on medium heat till the tomatoes turn soft and pulpy.
4. Add red chilli powder, 2-3 tablespoons coriander leaves and blend well.
5. Include rice and mix. Add 2 1/2 cups hot water. Change salt.
6. Once the mixture concerns a boil, cover and cook on medium heat for 10-12 minutes.
7. Add remaining coriander leaves and blend well.
8. Transfer into a serving plate, garnish with coriander sprig and serve hot with boondi raita.
