Noon Chai | कश्मीरी स्टाइल नून चाय | Monsoon ka Mazza | Episode 63 | Sanjeev Kapoor Khazana

A standard tea from the Kashmiri mountains- Twelve noon Chai, has an unique taste and colour! Enjoy this event rapidly from anywhere and anyday.

TWELVE NOON CHAI

Ingredients

2 tsps tea leaves
A pinch of salt
1 inch cinnamon stick
2 green cardamoms
1 star anise
1/2 tsp baking soda
1 cup milk
2 1/2 tbsps sugar
Powdered pistachios for garnish
Dried increased petals for garnish
Nankhatai to serve

Technique

1. Heat 1 1/2 cups water in a deep saucepan, include tea leaves and blend well. Bring to a boil.
2. Include cinnamon stick, green cardamoms, star anise and mix well. Prepare for 1 minute.
3. Add salt, baking soda and blend well. Include milk and mix well.
4. Sugarcoat and cook till the sugar melts. Take the pan off the heat.
5. Strain the tea in a cup, garnish with powdered pistachios, dried rose petal and serve hot with naankhatai.

  2. Noon Chai is traditionally prepared in a samovar, a unique metal container ❤

    1. Its widely used in Russia too. I meant the samovar. Did the Rajahs of Kasmir bring it with them or imported them?

  3. Remarkable but I will skip milk & sugar. One question though, why baking soda? What does it contribute to?

    1. Baking soda is added to give the tea a nice striking burgundy colour…
      As baking soda reacts with the green tea leaves to give it a burgundy Kashmiri noon…

  4. Noon means salt..you are using sugar instead of salt.. haha.. come to kashmir you will get to know about authentic noon chai !!

    1. @@Nana-Kunwar it depends on the quantity of noon Chai,accordingly we add the salt.

  5. Sanjeev ji you trying to make pok njn chai .in our kashmir no one consume this kind of nun chai we never use suger in it.
