Noodle Roll | नूडल रोल | Noodle Frankie | Evening Snacks | Street Food | Sanjeev Kapoor Khazana

For those who enjoy rolls/wraps and frankies, this street food with an Oriental stuffing is a lip-smacking in-between treat.


2 cups boiled noodles
1 1/2 cups improved flour (maida) + for cleaning
2-3 tablespoons oil + for drizzling
Salt to taste
1 tablespoon oil + for drizzling
1 tbsp finely sliced garlic
1/2 cup blended coloured capsicum strips
1/2 little carrot, peeled and cut into thin strips
1 cup shredded purple cabbage
2 spring onion bulbs, diagonally sliced
Salt to taste
1/2 tsp sugar
2 tsps red chilli sauce
1 tsp green chilli sauce
1/2 tsp dark soy sauce
1/2 tsp veg stock powder
1/2 tsp vinegar
2 tbsps sliced spring onion greens
2 tablespoons schezwan sauce
1 tbsp tomato catsup
1/4 tsp dark soy sauce


1. Take improved flour in a large bowl. Include oil, oil and 3/4 cup water and mix well. Knead into a soft dough. Sprinkle some oil and continue to knead for 4-5 minutes. Divide the dough into equivalent parts and form each portion into a ball. Cover with a moist muslin fabric and reserve for 10-15 minutes.
2. To make the noodles, heat oil in a non-stick wok. Include garlic, mix and cook till golden brown.
3. Add combined coloured capsicums, carrot, purple cabbage, and spring onion bulbs and blend well. Sauté on high heat for 1-2 minutes.
4. Include salt, sugar, red chilli sauce, green chilli sauce, dark soy sauce and veg stock powder and mix well.
5. Add the noodles and toss till well combined. Change the heat off, add vinegar and blend well.
6. To make the sauce, take schezwan sauce in a bowl. Include tomato catsup and dark soy sauce and mix well.
7. To make the roti, dust some refined flour on a worktop. Take a portion of the dough and shape it into a ball. Position it on the worktop and roll it into a thin disc.
8. Heat a non-stick tawa. Place the disc on it and cook for 30 seconds on each side.
9. Heat 1 tsp oil in the very same tawa, put the disc on it and cook for a few seconds on each side.
10. Location the roti on a worktop and apply some sauce. Include a portion of the noodles and tightly roll it.
11. Arrange on a serving plate and serve.
