Breadfruit fritters – deep-fried breadfruit pieces marinated in spices and coated with semolina are an interesting accompaniment to normal meals.
NEER PHANSACHE KAAP
Ingredients
1 small jackfruit (neer phanas), peeled, cut into wedges and soaked
Oil for shallow-frying
Salt to taste
Juice of 1/2 lemon
2 tsps ginger-garlic paste
1 tsp red chilli powder
1/2 tsp turmeric powder
1 teaspoon coriander powder
1/2 tsp cumin powder
1/2 cup semolina
2 tbsps rice flour
Method
1. Take drained jackfruit wedges in a bowl.
2. Heat some oil in a non-stick pan.
3. Add salt, lemon juice, ginger-garlic paste, chilli powder, turmeric powder, coriander powder and cumin powder to jackfruit and mix well.
4. Take semolina on a plate. Include rice flour and salt and blend well.
5. Coat the marinaded jackfruit wedges with semolina mix and shallow-fry in hot oil on low heat till golden and crisp from both sides. Drain on absorbent paper.
6. Serve hot.
